Update: Cindy's Birthday Cupcakes- Pumpkin Choc Chip Cupcake RECIPE POSTED

It was widely determined amongst the Star 94 staff that the Pumpkin- Chocolate Chip cupcakes were the favorite of those I made for Cindy's birthday.
Everyone agreed it was because of their uniqueness, but also their deliciousness!

THANK YOU to Star 94 listener, Amanda Watkins for e-mailing me this recipe! I've had several e-mails asking for the recipe so here ya go!
...This would make a great desert for your Halloween party this weekend! :)

3 c. all-purpose flour
1 t. baking soda
1 t. salt
2 t. cinnamon
(Amanda suggested adding an extra tsp of pumpkin pie spice in addition to the cinnamon, which i did.)
4 eggs
2 c. sugar
15 oz can pumpkin
1-1/4 c. oil
1-1/2 c. semi-sweet chocolate chips

Combine flour, baking soda, salt and cinnamon in a large bowl; set aside. Beat together eggs, sugar, pumpkin and oil in a large bowl; stir into dry ingredients just until moistened. Fold in chocolate chips; pour into greased or lined cupcake/muffin pans. Bake at 350 degrees for 25-30 minutes or until a toothpick tests clean.
Cool for 10 minutes before removing to wire racks to finish cooling.

You can also make this recipe into loaves...in this case:
Pour batter into two greased 8"x4"loaf pans. Bake at 350 degrees for 60-70 minutes, or until a toothpick tests clean. Cool for 10 minutes before removing to wire racks to finish cooling.
